
I like to DIY these frozen yogurt cups for an easy and delicious treat that packs nutrition with calcium, vitamin C, probiotics and fiber! The greek yogurt offers a rich source of calcium, protein and probiotics. Raspberries provide a great dose of vitamin C and are a fiber-rich food, working well with the probiotics for gut health! As we all look forward to warmer temperatures in the spring season, these cups are a sweet and refreshing snack perfect for the warm months ahead.
These cups store well in the freezer and refrigerator, making them great to prepare ahead of time for busy weeks. Keeping nutrition easily accessible is the first step to making sure you are fueled well. *Pro tip, if you keep tubs of greek yogurt on hand, this recipe is perfect for making as many yogurt cups as you desire – make 6, 12 or more! This type of recipe is perfect for measuring with your heart.
You will need a silicone muffin pan or silicone muffin liners to provide the mold for the yogurt cups without worry they will stick to a regular muffin pan. You can also use a silicone ice cube tray for a more “bite-sized” effect, which is perfect for little ones.
Ingredients:
- ~ 1 cup Greek yogurt (I used vanilla but you can use other flavors or plain yogurt if you prefer it)
- 1/2 cup Frozen raspberries
- 1-2 tbsp of honey or maple syrup (based on sweetness preference)
- Dark chocolate chunks or mini chocolate chips
Directions:
- Using a cookie scoop or regular spoon, fill up silicone mold ~ ½ way with greek yogurt of choice.
- Add frozen raspberries to a glass bowl and microwave for ~ 30 seconds. Add 1-2 Tbsp of honey or maple syrup for added sweetness to the berry mixture.
- Spoon the berry mixture into the silicone cups until filled to the top.
- Top with dark chocolate chunks or mini chocolate chips – as much as you desire!
- Freeze until the cups are firm – these store well in an airtight container in the freezer for 3-4 weeks.
*Serving tip: Let sit at room temperature for a few minutes to soften before enjoying or pack in a lunchbox for the perfect consistency to be enjoyed later in the day.
